Mom's Granola

The other day I made my Mom's delicious granola.

As it was baking, the yummy aroma instantly brought me back to my childhood.
It was such a special treat growing up and my girls now love it too.

Part of my joy of being in the kitchen is creating sweet memories for my family.
My mom and I put together this cookbook the year I got my first apartment, I was a sophomore.
I adore each little grease stain and smudge.
I can still picture my Mom and I sitting at the kitchen table copying all my favorite recipes.

It really is an easy recipe.
You melt all the wet ingredients together.
Stir all the dry ingredients together.
Then mix the two together and bake.

My girls like it with milk.
But I love it with maple yogurt.
Oh yum!

Thought you might enjoy the recipe with your family too.

Mom's Granola
3 cups coconut (7 oz. package)
3 cups nuts (I like to mix a few kinds.  I know, I'm crazy!)
5 cups old fashion oatmeal
1/2 cup wheat germ
3/4 cup butter
1/2 cup peanut butter
3/4 cup honey

After melting the wet ingredients, mix all the ingredients together.  Put in a shallow pan and bake at 275, stirring every 15 minutes, until crisp- about 45 minutes.

Hope you have time today
to spend some sweet moments
with your family in the kitchen!
